Jack’s Gelato x Panzer’s

After making ice cream in restaurants for 11 years, Jack van Praag launched Jack’s Gelato in 2010. Based in Cambridge, his criteria of making every single ice cream in small batches and only using the very best ingredients remains more than a decade later.  And, once we’d tried every flavour he’d ever churned and scooped, we knew that this was the ice cream we wanted to serve at Panzer’s.

We interviewed Jack for our May Newsletter:

What makes a great ice cream?  Great ingredients, the best equipment, skill and hard work!

How many boules is best?  Generally, I would say one! I think most of the time a flavour is best enjoyed on its own. As with every rule, there are exceptions – for example: try a scoop of Lemon with a scoop of Dark Chocolate & Sea Salt.

Which is your favourite flavour and why?    It would have to be Stracciatella. I just love it. The contrast between the sweet cream base and the dark bitter chocolate is just something I will never tire of. We use the best milk and cream from The Estate Dairy and various world class chocolates (at the moment we are using chocolate from Pump Street Bakery) and they are both able to absolutely shine.

Where would we find you on a hot summer’s day?  In the kitchen.

How would you describe Panzer’s?   Utterly Unique. Driven by passion and obsession. A treasure trove of the world’s best produce.

How do you eat your bagel?  Everything Bagel toasted with cream cheese and jalapenos.

You’ll find 13 flavours of Jack’s Gelato in Panzer’s Ice Cream freezer.

Scooping: 12noon -730pm

April Employee of the Month

Anna is part of the shop floor team ensuring that our shelves are not only fully stocked but also beautifully displayed. She checks in deliveriesupdating our systems and has been recognised because she is meticulousfocussed and a huge asset to the business.

How long have you worked at Panzer’s?  Just over 2 years.

What do you love about your role?  Well, I love food and I also love people – the team here is brilliant and the customers are super friendly too!  So I think it’s the combination of the food and the people, plus I’m always learning in my role which is important to me.

Describe Panzer’s in 3 words.  Top quality and international.

Which is your favourite bagel? I adore the Everything Bagel – either with nothing on it or with smoked salmon and cream cheese.

Do seek out Anna when you’re shopping in store and congratulate her in person!

Blondies Kitchen Cookie Dough Rolls

Ready-to-bake Cookie Dough Rolls have been one of the biggest lockdown joys in many a Panzer’s household.  All you have to do is slice the dough and pop in a pre-heated oven for 10-12 minutes.  The cookies are second to none, the effort really is minimal!  We couldn’t wait to zoom-in on Blondies Kitchen and find out more about Kristelle and Chelsie, the team behind this genius idea. Unsurprisingly, Kristelle’s background had always been in restaurants and Chelsie spent more than two years at BBC Good Food as a cookery writer.

Here is our interview with the duo:

Do you both have foodie backgrounds?

Yes – we’ve both worked in food for a while plus we’re trained chefs so we know a thing or 2 about cookies

Where did the idea come from?

Kristelle had been baking the original recipe since she was a child and always sold the cookies at the deli where she worked. Each batch she made flew off the shelves. So, we started adapting and creating lots of different flavours. Before we knew it, we were branded “the cookie girls” in North London.

Which cookie do you eat the most?

Whenever we add new flavours to our menu, they’re often my “go to” cookie for a few weeks until I can’t eat any more! Although, one cookie that I’ll never tire of is our Cocoberry cookie. It’s a toasted coconut base with raspberry jam and desiccated coconut on top. It reminds me of the old school coconut sponge and custard I used to love as a child, and each bite takes me right back to that happy time. In my humble opinion, it’s the most underrated cookie on the menu. Everyone always goes for chocolate!

How would you describe Panzer’s?

Panzer’s is every food lover’s dream.  Aisles of freshness, exciting new products and, of course, quality ingredients and fresh food. You pop in for something you need but leave with a dozen things you never knew you wanted. For me, it’s the deli I wish was across the road from me, but is worth making the trip, even though it’s not

Favourite bagel topping?

Smoked Salmon, cream cheese, squeeze of lemon and a twist of cracked black pepper. I’m a classic Jewish girl, what can I say![Text Wrapping Break]

What’s next for Blondies Kitchen?

We’re constantly innovating and creating new products for our lovely customers. Covid has been such a worrying time for all food businesses so this year we’re taking everything in our stride and focusing on producing the quality we love.

Look out for our Blondies Kitchen Easy-to-Bake Dough in the dessert fridge near the deli counter.

Brie aux Truffles – Panzer’s Recipe

This month’s cheese is Brie aux Truffles – and it’s just one of the richest, most sumptuous and indulgent treats you will have ever tasted.  We truffle it in our kitchens at Panzer’s and thought that we’d share our recipe with you all.

  1. Mix mascarpone in a bowl with a jar of black truffle paste. Add crème fraîche in small amounts to loosen the mix. The texture must hold itself but have a loose enough texture to spread.
  2. Cut the Brie de Meaux in half to give you two round discs. Be careful not to cut through the top or bottom rind.
  3. Begin adding the mix to one side of the Brie de Meaux as you would a cake. The centre should be piled higher than the edges. (We suggest 2cm in depth in the centre going down to 1cm at the edges.)
  4. Peel the tough exterior of the truffle with a sharp knife. Be careful not to remove the soft truffle interior. Once peeled, the truffle should be finely grated over the mascarpone mix.
  5. Place the other disc of Brie de Meaux on top and lightly apply pressure. Ideally this should be done one day before serving.

You can use either white or black truffles.  Serve with aArpège Champagne or a delicious bottle of Barolo.

Brie aux Truffles is best if eaten at room temperature.

SUSHI ATELIER at Panzer’s

It’s been a few months now since the skilled sushi chefs of restaurants Sushi Atelier and Chisou entered the world of Panzer’s (download MENU here) – and yet every day we drool over their imaginative dishes and delicious flavour combinations.

Earlier this month, we caught up with Robert – the head sushi chef onsite at Panzer’s – to ask him a few sushi-related questions:

What do you love about being in store at Panzer’s?   Oh that’s easy to answer!  It’s the quality of the products in the shop which is so fantastic – and the happyprofessional staff are a pleasure to work alongside.

Sushi Atelier at Panzer’s

Which items on our Panzer’s x Sushi Atelier menu are most popular?   The salmon set, the salmon avocado roll as well as the spicy tuna roll are the biggest sellers for us. The Panzer’s customers certainly love their salmon!

Describe this month’s special roll   This is our Sunflower Roll: tuna and cucumber roll with yuzu mayo, wrapped with salmon and then topped with crushed pistachios while served with honey sweet kabayaki sauce.

Why we should all eating it?   Sushi is as much about texture as it is about flavour and this roll certainly packs a punch on both!

Which of the sushi platters makes a perfect takeaway dinner – and what would you advise alongside this?   Any of our medium platters (for 3-4 people) should be ordered with some edamame, gyoza and miso soup.

Do you deliver locally to Panzer’s?   Yes, we do.  Plus, you can always order for collection if you live further afield.

How does a festive sushi feast look?   The Japanese love sake at Christmas and New Year so I’d recommend celebrating with one of our large platters while adding a bottle of sake (which we now sell from the sushi fridge in store). The Hakuko Red Label is an amazing all-round sake which you can drink cold or hot. It’s Junmai so pairs very well with the sushi.

The Sushi Atelier team is on site at Panzer’s every day.  Order from our menu, at the sushi bar or online – or pick up a box of sushi from the fridge opposite the Coffee Bar.

The Estate Dairy at Panzer’s

We’re so proud to offer The Estate Dairy’s fabulous milk at Panzer’s. Produced by expertly reared Guernsey cows in the Chew Valley, Somerset. We chose their milk because of its beautifully rich flavour and the wonderful story behind the business. But we wanted to know a little more about them, their farming methods and their passion to only bottle the best… so we caught up with the founder Shaun Young to ask him a few questions:

Why does your milk taste so much better than others?

For us it’s all about great sourcing and processing. We work with small family run dairy farms who predominantly rear Jersey and Guernsey herds. This gives us milk in a lot less volume however the constituents of milk (Fat and Protein) are higher in quality. We then process the milk as little as possible. We gently pasteurise and never homogenise our dairy resulting in a product that’s a close to the farm gate as possible.

How many cows do you currently have?  We work with 3 dairy farms in Somerset which have a total of around 300 milking cows.

Why do you love working with Panzer’s?  It’s great brand alignment for us! To be amongst other great quality producers all under one roof…. what’s not to love?

Had you shopped at Panzer’s before you started supplying us? What have you ever bought from our store?  Yes. Bagels.  Always.

Favourite homecooked meal?  Scrambled eggs on toast with halloumi.  It has to be Cacklebean eggs , our own cultured butter, Snapery sourdough and Kupros Halloumi.

How have consumers and their (food) habits changed this year Lockdown has pushed consumers to shop more locally of which has definitely had an impact for small quality focused producers. We’ve seen a huge lift in our retail lines which has remained consistent to date.

What’s next for Estate Dairy? We’re making some real progress with the dairy where we produce our butter. We’ve got some big aspirations to continuing growing and producing a really good British cultured butter.

Gifting at Rosh Hashana, the Jewish New Year

The Jewish New Year falls this year on Saturday 19th September, with celebrations beginning the evening before.  It’s customary to eat a deliciously sweet dinner with your family and friends and to gift those you can’t be with.  These feasts often include a round challah bread studded with raisons (never enough sweetness at this time of year!) and apples which are eaten dipped in honey.

A particularly thoughtful gesture – which will certainly be appreciated in these strange Covid times – is a food gift.  Mouth-watering fruit (and vegetable) baskets as well as Panzer’s kosher hampers can be ordered on our website as well as in store.  The fruit baskets can be delivered across London whereas all the Panzer’s Hampers can be sent nationwide.

So, what are the special foods for gifting at Rosh Hashana (Jewish New Year)?

Panzer’s Rosh Hashana Hamper

Our delicious kosher hampers are full of delights.

The perfected house-made Panzer’s Honey Cake, Firetree’s Volcanic Chocolate, Panzer’s Honey, a huge selection of apples to choose from, Panzer’s Extra Virgin Olive Oil, kosher wine, dried fruits and so much more.

Panzer’s Honey

Just to remind you, this is no ordinary honey. Panzer’s has collaborated with a family-run Lithuanian farm who only use organic produce with absolutely no pesticides in sight. They’ve won awards for their magnificent honey and once you taste it, you’ll see why – its quality, taste and provenance is really outstanding. You’ll see on our shelves (as well as online) Panzer’s Spring and Summer Honey as well the very popular Buckwheat, Ginger, Cocoa and Vanilla Honey. For those who prefer a fruitier taste – our honey with Blueberries, Cranberries and Cinnamon with Orange and Lemon are all a real treat.

Apples –  again, Panzer’s has all the variety you could wish for…

But English apples are one of the nation’s best loved fruit – and perfectly in season for crunching over the Jewish New Year. Our apples will be carefully selected from some of the most reputable growers in the country, including the famous Brogdale Farm in Kent.

Honey Cake  – Using a secret, four-generations-old recipe, Panzer’s Honey Cake is moist, light, easy to slice and will keep fresh for 5 days. In store from 1st September and also available to buy online for delivery nationwide.

Kosher wine & chocolate – for those who prefer to gift kosher items on a Jewish holiday, we have a huge selection of the best kosher wines and kosher chocolates.

Pomegranate & other exotic fruits are also symbolic of a sweet and healthy new year – and make wonderful additions to any hamper or gift.

Flowers  – do contact the Panzer’s Flower Team to discuss bouquets you may like to send in the London area.  They would also be delighted to create some floral magic for your dining room table.

Wishing all those celebrating – Shana Tova – a happy and healthy new year!

Mediterranean Tuna Sandwich by Esther Clark

SERVES 2

PREP 20 mins

COOK 12 mins

1 Put your pepper directly on the flame on your hob and cook for 10-12 mins or until blistered and blackened, turning regularly with tongs. If you don’t have a gas hob simply grill your pepper on the highest setting for around the same amount of time. Once blackened set aside to cool down a little. When cool enough to handle, gently peel off the skin and discard, deseed and slice the flesh into strips.

2 Put the pepper in a bowl with the olive oil, lemon and olives and capers and season with black pepper. Cover and set aside in the fridge for 1 hr to marinate.

3 Flake the tuna into a bowl in large chunks, fold through a pinch of salt, pepper as well as the yoghurt, mayonnaise, red onion and basil.  Pile the tuna mixture on to 2 halves of the bread well as the marinated olives and peppers. Top with a few extra leaves of basil and sandwich together.

Boku Coco Love

Because – let’s face it – there are lots of superfood powders in the market and we needed to know what makes Boku different?

Boku Organic Umami Super Spice
