Ice cream is what many of us grew up with: rich, creamy, and whipped to be light and airy. It’s made with more cream (and sometimes egg yolks), then churned fast to incorporate air, which gives it that fluffy, melt-in-your-mouth texture. It’s usually served colder too, which means the flavours are a little more muted until it starts to soften.

Gelato, Italy’s answer to ice cream, takes a different approach. It uses more milk than cream and is churned slowly, resulting in a denser, silkier texture with less air. It’s served at a slightly warmer temperature, which allows the flavours to shine through with incredible intensity.

1. Baboo Gelato

Annie and her husband, Sam were inspired to start Baboo Gelato after returning to the UK from Singapore, where they use to enjoy taking their four small children to an ice cream shop that sold delicious local flavours. Disappointed by the UK’s industrial offerings, they set out to create something exceptional using seasonal fruits from their Dorset Garden and organic milk from Somerset. Annie trained one year in Italy at the renowned Gelato University in Bologna.
Their efforts quickly paid off, winning a Champion Ice Cream award in their first year. The name Baboo is a heartfelt tribute to Annie’s Russian grandmother.

Jefferson’s began in Celine’s kitchen, born out of her son Aidan’s food intolerance and a mother’s determination to make something he could enjoy. However, the more they learnt about ice cream the more disappointed they became. So, her and her husband Christopher decided to leave their corporate jobs and set out to start Jefferson’s Ice Cream.

 They founded Jefferson’s with a simple mission: to create feel-good moments through seriously good ice cream. Tired of overly processed options, they set out to do things differently, using British organic milk and double cream, and ingredients that were free of artificial flavours and colours.  As Celine says, “We believe ice cream should be fun, nostalgic, and made with care”.

Norfolk County Ice Cream began in the mid – 80s with a simple idea: make ice cream the way you’d do it at home, using fresh cream and quality ingredients. It quickly found its place as a rich, luxurious treat for adults who appreciate pure flavour.

Chris Coughlan, the current owner, discovered Lakenham Creamery for sale in the Sunday Telegraph after returning to the UK from Nigeria. He made the leap from soap to ice cream and never looked back.

What began as a teenage kitchen job evolved into a lifelong passion for creating exceptional ice cream. Phil, affectionately known as Mr Bear, learned to make ice cream in a restaurant where everything was made from scratch and the love for ice-cold indulgences never left him. Bored of the ice cream scene, he set out to create something more seasonal, more chef-driven, and full of imagination. The name and logo were inspired by their family nickname – they’ve always been known as” The Bears”. How to Cook the Perfect BBQ: Tips from Our Head Chef, Ben

Summer is here, and that means it’s time to dust off the barbecue and dig out the tongs. The long, warm evenings have arrived, perfect for gathering with friends and family, enjoying cold drinks, and filling the garden with the delicious aroma of food on the grill. Whether you’re a seasoned grill master or trying your hand at your first cookout, our chef is here to help you master how to cook the perfect BBQ.

From prep to plating, here’s everything you need to make this summer’s BBQ your best yet – with insider tips from our new head chef, Ben.

 1. Start with the Right Ingredients

Even the best BBQ techniques can’t fix poor ingredients. That’s why the foundation of the perfect BBQ is quality produce.

Meat That Makes a Difference

Chef’s first rule: “Buy better, cook simpler.” Start with flavourful cuts that shine on the grill. Our top picks:

    2. Prep Like a Pro

A successful BBQ isn’t just about standing by the grill – it’s about what happens before the flame even starts.

Chef’s Tip: ”Take the meat out of the fridge at least 30 minutes before grilling. Cold meat seizes and cooks unevenly. Room temperature is your friend.”

  • Pat meat dry with paper towels to get a good sear.
  • Pre-marinate your meats the night before, if possible. This locks in flavour and tenderizes tougher cuts.
  • Chop your veg ahead of time. Courgettes, peppers, red onions, mushrooms, and corn are grill-friendly favourites.
3.  Mastering the Grill

Now for the star of the show – the flame. Whether you swear by gas or are loyal to charcoal, getting the fire right is where great BBQ begins. A few simple steps can make all the difference between average and unforgettable:

  • Preheat the grill properly. Give it 10–15 minutes to reach the right temperature.
  • Clean the grates with a brush or half an onion – yes, really! It removes old residue and prevents sticking.
  • Lightly oil your meat or vegetables — not the grates. This helps prevent sticking and gives you that beautiful sear without unnecessary smoke.

Know Your Heat Zones

This is one of the most important things to master: your grill doesn’t cook at the same temperature across the whole surface. Think of it like your kitchen hob: some areas are hotter than others, and that’s a good thing.

Chef’s Tip: “Don’t treat the grill like a frying pan. Use different heat zones the way a chef uses different burners. It gives you control and better results.”

  • Direct heat (right over the flame) is where you get that sizzle, sear, and smoky char. Perfect for thinner cuts like burgers, sausages, or steaks.
  • Indirect heat (off to the side or on a cooler part of the grill) for cooking thicker cuts through without burning the outside.

Time is Everything

A great BBQ isn’t just about what you put on the grill, it’s when you take it off. Timing is the difference between a nice and juicy steak and a dry disappointment.

Cooking meat over fire requires patience and instinct, but here’s a small guide to keep you on track:

-Steaks: for rare, go 2–3 minutes per side; for medium, go for 4–5 minutes.

-Sausages: Sear them first to get that golden colour, then move to indirect heat for 10–15 minutes to finish gently. This keeps them juicy and stops them from splitting.

-Bone-in Chicken: These cuts take time – don’t rush them. Use indirect heat and cook slowly until the internal temperature hits 75°C. When it comes to BBQ, patience pays off.

Chef’s Tip: “Don’t poke or press your meat too much, you’ll lose all the juices. Let it sit and do its thing.”

4. Don’t forget the Sides

The main dishes might grab the spotlight at a BBQ, but let’s be honest – it’s the sides that really round out the feast. A great BBQ isn’t complete without a few fresh, zesty extras on the table. Pumpkin Pies, Roast Turkey & All The Trimmings | Celebrate Thanksgiving at Panzer’s

Join us for our annual Thanksgiving Lunch on Wednesday 27th & Thursday 28th November!

Join us for our annual Thanksgiving feast, served on our terrace or available for takeaway. Indulge in a classic Thanksgiving meal featuring roast turkey breast with homemade gravy and cranberry sauce, homemade stuffing, crispy roast potatoes, caramelized carrots and parsnips, and perfectly cooked Brussels sprouts. Finish off with a slice of our famous pumpkin pie or rich pecan pie for dessert. Whether dining on our terrace or taking it to go (first come, first served), indulge in the celebration of Thanksgiving with Panzer’s.

Panzer's Famous Pecan Pie Recipe

Ingredients

400 g sweet shortcrust pastry
5g butter, softened
200g pecans
1 tablespoon runny honey
110g butter, softened
110g caster sugar
3 medium eggs, beaten
110g ground almonds
25g flaked almonds
Icing sugar to dust
Raspberries
Clotted cream or creme fraiche

Method

On a lightly floured surface, roll out the pastry dough into a 1 cm thick large disc then place on a parchment-lined tray & refrigerate for 30 minutes. Grease the inside of a 24 cm diameter loose bottomed fluted tart tin with the butter and line with the chilled disc of pastry. Using a fork, prick the base of the pastry case all over. Put it in the refrigerator for 20 minutes.)

Preheat the oven to 190°C fan/210°C/gas mark 6/2. Once rested, trim away excess pastry from the top edge of the tin. Cover pastry with baking parchment and fill with ceramic baking beans. Bake in the preheated oven for 15 minutes.

Meanwhile, line a baking tray with baking parchment. Mix the pecans and honev and spread them across the lined baking tray. Remove the baking beans and parchment from the pastry case and return to the oven along with the tray of pecans for a further 10 minutes. Take the tart case and nuts out of the oven and allow to cool for 10 minutes. Lower the oven temperature to 180°C fan/200°C/Gas Mark 6.

While the pastry and nuts are cooling, whisk together the butter and sugar until Pale. Gradually whisk in the eggs, then stir in the ground almonds. Pour the frangipane mixture into the pastry case. Evenly spread the pecans over the top, pushing them down into the filling, and then scatter the flaked almonds all over. Bake for 35 minutes or until the frangipane has risen and is golden in colour.

Lightly dust with icing sugar. Serve while still warm with a handful of raspberries and some clotted cream or creme fraiche on the side.

Autumn is here, and with it, that sweet seasonal shift that symbolises change. Our greengrocer is overflowing and there’s an incomparable joy in eating what’s at its best right now, knowing it won’t be around forever. So come down, fill your baskets, and let these ingredients shape your Autumn feasts.

CHESTNUTS

Chestnut season is here, though the best ones are yet to ripen—usually mid to late October. Perfect for roasting, splitting their shells and letting the kitchen fill with that unmistakable aroma. Try folding them through wilted greens or stirring them into a chestnut and mushroom ragù.

FRESH CORN

Fresh corn still holds on for a little while longer—its bright sweetness a reminder of summer’s warmth. Char the kernels over a flame, toss with chilli, butter, and a squeeze of lime. There’s something joyful about corn on an October table, a vibrant holdout against the cold.

ARTICHOKES 

Artichokes are back, and what a sight they are: delicate yet sturdy, a vegetable that rewards patience. Steam them whole, pulling apart petal by petal, each dip into vinaigrette a slow, sensory pleasure. The hearts, tender and sweet, make a perfect addition to an autumn stew or a light, lemony pasta.

WINTER TOMATOES

Winter tomatoes—yes, they do exist, and they have something to say. Smaller, denser, and thicker skinned than their summer cousins, winter tomatoes are perfect for slow-cooking. Roast them low and slow, let their flavors intensify. Pile them onto toast with olive oil and a sprinkling of salt, or cook them down into a rich sauce that will bring brightness to the darker days.

PUMPKINS & SQUASH 

Then there are the pumpkins and squash—symbols of the season, from golden orbs to knobbly, crooked beauties. Roast them until their edges caramelise, bring them into soups, bake them into cakes. They give body and sweetness, a comforting depth that carries through whatever you cook. A pumpkin risotto, perhaps, or a velvety squash purée to serve alongside something roasted.

Local London Delivery

Due to the nature of our range, some items can only be delivered within the London area. If your order containers any flowers or fresh fruit then you will need to live locally to be able to have it delivered. Sushi is delivered within a 3 mile radius of our store.

Nationwide Delivery

All other goods can be delivered nationwide (excluding Highlands and Islands) via our partner couriers. There is a slightly larger delivery cost for this service outside of London.

Collection In Store

Everything on the store can be ordered for collection from our store. Orders must be picked up on your chosen collection date, and can be picked up from the store between the hours of 9am – 6pm, seven days a week. If your order was placed online, please bring your order confirmation when collecting.
