About La Ca dal Non Saba Balsamic
Saba is an ancient product, together with honey it has been for long centuries the sugar of our ancestors.
Saba “La Cà dal Nôn” is born from our ancient family tradition of cooking grape juice to make cooked must for our Traditional Balsamic Vinegar of Modena and for saba. To produce saba, we select the grapes with the highest sugar degree from our vineyard, we press the grape and we cook the juice for long hours directly on fire in an open pot, till it reaches a reduction of more than half of its initial volume.

Taste: fruity flavour with a clean pleasant mild acid note at the end. Despite the long cooking and the intense sweetness, saba keeps the mild acidity of the grapes, and leaves the
mouth clean. The product consistency is sirupy and pleasant.
Use: as a sweetener - pure to top yoghurt or ice cream - combined with ricotta - on cheeses instead of honey - to bake biscuits or cakes instead of sugar- for sweet and sour preparations (veggies/ meat). As a cocktail syrup.
