La Cà dal Non” – vinegar farm the vinegar (i.e. “acetaia”) of “La Cà dal Non” (in Modenese dialect: The house of the grandfather) is in the old family house and has indeed a very long tradition. To produce Saba, we select the grapes with the highest sugar degree from our vineyard, we press the grape, and we cook the juice for long hours directly on fire in an open pot, till it reaches a reduction of more than half of its initial volume.
Taste: fruity sweet flavour with a mild finishing and clean acidity. Fluid consistency, mild and medium body.
Use it on top of the salads and steamed vegetables, to prepare chutney or for aperitives.
