La Cà dal Non” – vinegar farm the vinegar (i.e. “acetaia”) of “La Cà dal Non” (in Modenese dialect: The house of the grandfather) is in the old family house and has indeed a very long tradition. To produce Saba, we select the grapes with the highest sugar degree from our vineyard, we press the grape, and we cook the juice for long hours directly on fire in an open pot, till it reaches a reduction of more than half of its initial volume.

Sweet & Sour – Sweet with a mild note of acidity
Vinegar condiment obtained from naturally acetified cooked grape must, aged in barriques. Good fluidity, fruity flavour and a pleasant mild acidity.
Cooked Grape Must
Size: 250ml
Colour: dark amber
Perfume: fruity with a mild round acidity note
Taste: fruity flavour with a round clean acidity. Medium body, fluid consistency, full and round in taste.
