Gorgonzola DOP DOLCE - Piedmonte Italy- Sweet & Velvety
Sweet & Velvety - this is Gorgonzola as few have ever tasted it. Produced by Caseificio Tosi, one of the smallest and most traditional dairies in the Gorgonzola DOP consortium, this “al cucchiaio” (spoonable) version is a masterpiece of texture and terroir.
Made from whole cow’s milk gathered from the rolling hills between Lake Orta and Lake Maggiore, La Tosi’s Gorgonzola Dolce matures for a minimum of 70 days, developing its signature sweet aroma and delicate blue veining. The result is an ultra-creamy paste, so soft it’s designed to be served directly with a spoon.
Expect a sweet, milky flavour layered with gentle herbaceous and fruity notes, finishing on a lingering whisper of cream and blue mould. Every spoonful reveals the craftsmanship of a producer who hand-turns and matures each cheese in traditional cellars — a rare, small-batch treasure representing just 1% of total DOP production.
