About the barrel aged fetaFor all of us in Papathanassiou family, our Barrel-Aged Feta represents our most valuable product. It is made with sheep's milk and a touch of goat milk. The sheep’s milk is coming mainly from native breeds. Our Barrel-Aged Feta maturesfor at least 6 months in beech barrels from Pindos mountain . Our Barrel-Aged Feta describes in the most accurate way the biodiversity of our region and our environment.

Taste and other notes: The texture is semi-hard, creamy and its color is white. The taste is spicy, milky, buttery and full on the palate. The aftertaste is long, spicy, creamy with distinctive hints from pastures, nature and with the aromas of beech wood.
