The Kelly Bronze is the direct descendant of the turkeys that took Henry VIII and the noble Tudor table by storm. The Kelly Bronze turkey is raised wild – free to run and forage in woodlands across four seasons. They still follow the age-old tradition of plucking them by hand and dry hanging them to allow the flavour to intensify and the meat to tenderise. It’s not the easiest, nor the cheapest way to farm turkeys but the Kelly Bronze is a royalty amongst roasts.

Cooking Time (in a standard oven):
4 kg-1,75 hours
5kg-2 hours
A Kelly Bronze will cook quicker because of the intramuscular fat that is not present in a standard bird. Remove the meat from the oven as soon as the needle hits 60°C and leave to stand for at least 30 mins.
If the temperature of the meat after standing for 30 mins is:
58°C – It’s Pink
60°C – It’s Perfect
70°C – It’s Overcooked
