Cow - St. Felicien
Saint Felicien is a bloomy rind, double cream cow’s milk cheese (some crème fraiche is added to the milk before the curd is split from the whey). The texture is soft and slightly porous. Inside, it is creamy and pasty. It is farmy on the nose, and on the palate there are notes of fresh grass,butter and cream, with a nice acidity in the finish. Pair with Rhone white wine or light red. Can be baked in filo pastry. It can also be added to creme fraiche to make a cheesy sauce.
