Sea Sisters Salt Pollock
Salt Pollock with Garlic and Bay in Extra Virgin Olive Oil.

Simply the best Pollock you can get. It's pole and line caught on small day boats in Cornwall and Devon, handled with impeccable care and delivered to us in immaculate condition.Once in our care, we fillet, debone and preserve the Pollock in 100% unrefined natural salt. A few weeks and labour intensive steps later, we then preserve it in a beautifully fruity Arbequina extra virgin olive oil which is infused with bay leaves and fresh garlic.
Three ways to enjoy our Salt Pollock besides indulging straight from the tin:
Drain the tin, reserving the oil. Flake the pollock into a chunky tomato, caper, olive and parsley salad. Toss the ingredients with the liquor from the tin with a splash of red wine vinegar. Gently fold through a handful of rocket and plate up.
This one is extra simple. Drain a little oil from the tin and lightly work the fish with a wooden spoon in a bowl. Add a dash of lemon. Spread on garlic rubbed toast, and drizzle remaining liquor over the top. This has to be accompanied of course, with a soft boiled egg.Risotto. Use a simple white risotto recipe for this but cook the vegetable base in the oil from the tin. Just as the risotto rice is cooked and looking unctuous flake in the fish and warm it through. Finish with butter, a squeeze of lemon and some chopped parsley.
