Refined over more than a century of craftsmanship, this beeswax-coated cow’s milk cheese from Emanuela Perenzin is a testament to the Veneto dairy tradition and quiet innovation. Aged for at least six months, the cheese develops a smooth amber rind — naturally sealed with beeswax to preserve its moisture and encourage a uniquely supple texture for such a long-matured wheel.
Inside, the paste is straw-yellow and firm, offering a sweet, elegant flavour with hints of honey and vanilla. The beeswax not only protects but also subtly influences maturation, locking in the cheese’s natural moisture and creating an unusually creamy balance within a hard paste.
The Perenzin family has been producing cheese since 1898, now in its fourth and fifth generations, blending time-honoured Venetian techniques with modern refinement.
