This beeswax-coated cheese by Latteria Perenzin is a true testament to traditional Italian craftsmanship and natural preservation. Made from pasteurised cow’s milk, it is matured for at least six months. The cheese displays a rich, straw-yellow paste beneath a stunning amber beeswax rind.
Its flavour is sweet and aromatic, with delicate notes of honey and a gentle touch of vanilla, creating a smooth and satisfying taste experience. The beeswax coating naturally protects the cheese during ripening, maintaining moisture and preventing mould while lending it an unusually supple texture for a matured cheese.
