Regina dei Sibillini Stringhette
Regina dei Sibillini is a farm in Montefortino that produces pasta using only the durum wheat coming from its land on the Sibillini Mountains.
The philosophy of the Regina dei Sibillini is to cultivate and transform, in order to bring into our pasta all, the good that is in the mountain: water, and air.
Regina dei Sibillini produces pasta according to the handcraft process, it is wire drowned in bronze then put to dry at low temperatures, using only wheat that comes from the top soil in the heights at an altitude between 600 to 900 mt. sea level.
The geographic position of the farm in the Sibillini Mountains guarantees a truly uncontaminated ambient: water and air, essential elements in the production of their pasta, are of absolute quality.
The raw material cultivated, wholesome and with unique properties gives to the made product a characteristic taste rich in flavour and scent that is distinguished already the moment that it is cooked.
For sure it is the shape that we prefer at home, where the aroma of the pasta while cooking almost always announces a nice dish of mezze maniche. And our favourite sauce? The beautiful atmosphere that comes to be around a table with your family!
In ancient times, the Stringhetti pasta was made made by pressing the pasta on a wooden tool that had taut and parallel steel wires, similar to a guitar: from this comes the name “maccheroni alla chitarra” (guitar noodles). In the Marche region they are known as stringhetti, but from us comes the name stringhette, bringing to mind the leather shoe laces that tied the boots of mountaineers in the past epoch.
